简介：槲皮素（Quercetin），也称作五羟黄酮，是一种存在于水果、蔬菜和谷物等植物中的植源性黄酮类化合物。槲皮素广泛存在于自然界中。其英文名“quercetin”最早出现于1857年，其来源于“quercetum”，意为栎树林。其是一种天然的生长素极性运输抑制剂。槲皮素含量丰富的食品包括：茶叶（茶树；2000-2500mg/kg），刺山柑（1800mg/kg），欧当归（1700mg/kg），苹果（44mg/kg），红洋葱（1910mg/kg，最外层的含量最高），红葡萄，柑橘、西红柿、西兰花及其他绿叶蔬菜。此外还有许多浆果的含量也较高，包括覆盆子、欧洲越橘（158mg/kg，鲜重），越橘（种植74mg/kg，野生146mg/kg），蔓越莓（种植83mg/kg，野生121mg/kg），沙棘（62mg/kg），岩高兰（种植53mg/kg，野生56mg/kg）及仙人掌的果实。2007年一项研究发现，有机种植的西红柿槲皮素含量比传统种植的高出79%。澳大利亚昆士兰大学的一项研究表明，部分品种的蜂蜜中也存在槲皮素，包括来源于桉树及澳洲茶树的蜂蜜。。

用途：槲皮素具有较好的祛痰、止咳作用，并有一定的平喘作用，用于治疗慢性支气管炎。此外还有降低血压、增强毛细血管抵抗力、减少毛细血管脆性、降血脂、扩张冠状动脉、增加冠脉血流量等作用，对冠心病及高血压患者有辅助治疗作用。抗肿瘤作用与抗血小板聚集：槲皮素能显著抑制促癌剂的作用、抑制离体恶性细胞的生长、抑制艾氏腹水癌细胞DNA、RNA和蛋白质合成。槲皮素有抑制血小板聚集和5-羟色胺（5-HT）的释放作用。槲皮素对ADP、凝血酶和血小板活化因子（PAF）诱导的血小板聚集均有明显抑制作用，其中对PAF的抑制作用最强，槲皮素也能明显抑制凝血酶诱导的兔血小板3H-5-HT释放。
