简介：Sarsasapogeninisasteroidalsapogenin,thatistheaglycosidicportionofaplantsaponin.Itisnamedaftersarsaparilla(Smilaxsp.),afamilyofclimbingplantsfoundinsubtropicalregions.Itwasoneofthefirstsapogeninstobeidentified,andthefirstspirostansteroidtobeidentifiedassuch.Theidentificationofthespirostanstructure,withitsketonespiroacetalfunctionality,wasfundamentalinthedevelopmentoftheMarkerdegradation,whichallowedtheindustrialproductionofprogesteroneandothersexhormonesfromplantsteroids.

用途：乳化剂;发泡剂;防腐剂。主要用于清凉饮料、发泡甜食、混合酒等。GB2760-2000规定为允许使用的食品用香料。
