简介：Sotolon(alsoknownassotolone)isalactoneandanextremelypowerfularomacompound,withthetypicalsmelloffenugreekorcurryathighconcentrationsandmaplesyrup,caramel,orburntsugaratlowerconcentrations.Sotolonisthemajoraromaandflavorcomponentoffenugreekseedandlovage,andisoneofseveralaromaticandflavorcomponentsofartificialmaplesyrup.Itisalsopresentinmolasses,agedrum,agedsakeandwhitewine,florsherry,roasttobacco,anddriedfruitingbodiesofthemushroomLactariushelvus.Sotoloncanpassthroughthebodyrelativelyunchanged,andconsumptionoffoodshighinsotolon,suchasfenugreek,canimpartamaplesyruparomatoone'ssweatandurine.Insomeindividualswiththegeneticdisordermaplesyrupurinedisease,itisspontaneouslyproducedintheirbodiesandexcretedintheirurine,leadingtothedisease'scharacteristicsmell.
